Easy Almond Sheet Cake

Okay… if you’re new around here it probably won’t take you long to figure out just how much I love eating sweets. (or just eating in general, ha!) I stay looking for great recipes, especially for dessert! My last almond cake I posted was pretty labor intensive with layers, fillings, etc. This one - is one of the EASIEST and YUMMIEST cakes you will ever make - especially if you love an almond flavored cake like I do!

What you’ll need:

For the cake:

  • 1 cup of butter (2 sticks)

  • 1 cup of water

  • 2 cups of flour

  • 2 cups of sugar

  • 2 eggs, beaten

  • 1/2 cup sour cream

  • 1 1/2 tsp of almond extract

  • 1 tsp of salt

  • 1 tsp of baking soda

For the Frosting:

  • 1/2 cup of butter (1 stick)

  • 1/4 cup of milk

  • 4 1/2 cups of powdered sugar

  • 1 tsp of almond extract

Instructions:

  1. Preheat oven to 375 F

  2. Combine 1 cup of butter and 1 cup of water on the stove and bring to a boil

  3. As you are waiting for the butter to melt and boil with the water, combine all other cake ingredients (flour, sugar, eggs, sour cream, almond extract, salt, and baking soda.). It will look like this:

4. Once your butter and water have come to a boil, remove from heat and pour into your other combined ingredients - mix together to complete the batter. It will look like this:

5. Butter and flour a jelly roll pan (15x10x1)

6. Pour cake batter into floured pan and bake act 375 for 20 mins or until done

7. While cake is baking, start on the frosting: bring milk and butter to a boil, then remove from heat and add powdered sugar and almond extract - mix well

8. Pour over warm cake and spread evenly

9. Allow frosting to set up, then cut into this sucker and enjoy!

This recipe is great to feed a crowd. It takes me less time to make than chocolate chip cookies and tastes like I spent hours on it, win-win! I’ve linked my baking pans below (my favorites) from Williams Sonoma! Let me know if you give this one a try :).
