A Sweet St. Patrick's Day Cocktail

Did you celebrate St. Patrick’s Day growing up? I remember always wearing green so my mom and brother wouldn’t pinch me. Such simpler times! Now that I am married to Kooper - his birthday is on St. Patrick’s day, we always celebrate! We have a local pub here - Dugan’s Pub, that has a fantastic drink called the Irish Seafoam. This year, I set out to make something that tasted close to that drink so that we could enjoy it at home. Whether you are wearing green or not this year, this simple cocktail can check that box and be your green accessory!

What you need to make your own Irish Seafoam:

  • 4 oz. of Malibu Rum

  • 3/4 oz. of blue curaçao

  • 1 oz. of pineapple juice

  • 1 oz. lemon juice

  • 1 egg white (if you like it frothy, if not this is optional)

Put all of this in a shaker cup and dry shake (no ice). Once you dry shake, add ice and shake again (shake it real good to froth your egg white) then strain and pour into your glass of choice!

All that’s left to do now, is enjoy! I tend to opt for a sugar rim on my drink just to make it extra sweet. If you like yours less sweet, feel free to add the amount of lemon juice you need to help balance it out or decrease the amount of blue curaçao!
