Scotchies: A fun twist on the traditional oatmeal cookie

I don’t know about you, but I get in a bad habit of always baking the same 3 desserts on repeat.  I feel like we are always looking for new recipes to try but always end up with the same ole’ chocolate chip based dessert.  Enter: scotchies.  I came across several recipes for these and have tweaked this recipe to be my own.  The butterscotch chips, mixed with the hint of orange citrus makes these the perfect treat for any time of year.  The other awesome thing about this recipe is that it makes a LOT of cookies (like, 4 dozen).  So be ready to share with your friends… or just eat them all yourself.  It’s easy to do, I’m not here to judge ;)

To make this recipe, you will need: 

  • 2 and 1/4 cups of all-purpose flour

  • 1/2 teaspoon of ground cinnamon

  • 1 teaspoon of baking soda

  • 3/4 teaspoon of salt

  • 2 sticks (8 ounces, 1 cup) of unsalted butter, at room temperature

  • 1 and 1/4 cups of light brown sugar, packed

  • 1/4 cup of granulated sugar

  • 1 teaspoon of orange zest

  • 1/2 teaspoon of orange extract

  • 2 teaspoons of vanilla extract

  • 2 large eggs, at room temperature

  • 1 and 1/2 tablespoons of molasses (not blackstrap)

  • 2 and 1/2 cups of old fashioned oats

  • 2 cups of butterscotch chips

To make perfect scotchies:

  1. Make sure your eggs and butter are at room temperature. Setting them out 20 mins prior to starting should do the trick

  2. This dough ends up being THICK. I have weak arms (lol) so I recommend using an electric or stand mixer with a paddle attachment.

  3. Line your baking sheets with parchment paper

  4. Watch these in the oven. I initially went to make this recipe by setting my timer for 13 mins. However, these were ready in my oven, in 10 mins. When the edges seem set, and the cookies are golden brown, they are ready to come out!

Instructions:

  1. Preheat oven to 350 F.

  2. In a mixing bowl combine the flour, cinnamon, baking soda, and salt. Set aside until needed.

  3. In your stand mixer, or in a large bowl with your electric mixer, beat the butter until smooth.

  4. Add in both sugars and continue beating until light and fluffy (around 2 mins). You may need to scrape down the sides and bottom of the bowl to ensure the ingredients are fully mixed.

  5. Add in the orange zest, orange extract, and vanilla extract. Beat until combined.

  6. Beat in the eggs, one at a time, scraping down the sides as needed. Beat in the molasses.

  7. On low speed, gradually add in the flour mixture, beating until the dry ingredients are just incorporated.

  8. Stir in the oats and all of the butterscotch chips, beat until just combined.

  9. Line 2 baking sheets with parchment paper

  10. Scoop 2-inch balls of cookie dough onto the prepared baking sheets, leaving about 1 and 1/2 inches between so they have room to spread.

  11. Bake one sheet at a time for 10-12 minutes, or until cookies are golden, set at the edges, and still slightly soft in the center.

  12. Cool cookies on the baking sheet or on a wire cooling rack for 10-15 before serving*

  13. ENJOY!

*I never wait this long, I eat them straight out of the oven and they are Heaven*
