Quick Weekend Cinnamon Rolls

I love pancakes, waffles, and my absolute favorite is cinnamon rolls! I love making homemade cinnamon rolls, but don’t always have the time. In case you’re like me, and are looking for cinnamon rolls that aren’t from a can, but also don’t take forever, look no further! Below is my easy mini cinni recipe.

March Reads Recap

In March, I was able to read seven books. In this post, I will give you six of the seven. One will be posted later on this week as my April suggested read of the month. Per usual, most of the below are psychological thrillers so if you want a good twist, any of these would be great :). All linked here or at the bottom of the post!

A Sweet St. Patrick's Day Cocktail

Did you celebrate St. Patrick’s Day growing up? I remember always wearing green so my mom and brother wouldn’t pinch me. Such simpler times! Now that I am married to Kooper - his birthday is on St. Patrick’s day, we always celebrate! We have a local pub here - Dugan’s Pub, that has a fantastic drink called the Irish Seafoam. This year, I set out to make something that tasted close to that drink so that we could enjoy it at home. Whether you are wearing green or not this year, this simple cocktail can check that box and be your green accessory!

I don’t know about you, but I get in a bad habit of always baking the same 3 desserts on repeat. I feel like we are always looking for new recipes to try but always end up with the same ole’ chocolate chip based dessert. Enter: scotchies. I came across several recipes for these and have tweaked this recipe to be my own. The butterscotch chips, mixed with the hint of orange citrus makes these the perfect treat for any time of year.

To me, there is nothing better than being on the edge of my seat, thinking I have a book figured out, only to have it completely wrong and have a huge twist at the very end!

Can you believe that it has been an entire year since COVID lockdowns started happening?? It seems like it was just yesterday that I hoped I would get to “work from home” for at least two weeks. HA! If only I had known then just how long I would be getting to work from home.
